Buying meat in bulk: hind quarter, whole lamb and homekill
Bulk meat is priced differently from the supermarket. A beef quarter or a whole lamb from a butcher is usually quoted per kilo of hanging weight, the carcass before it is cut, plus cutting and packing; homekill is your own animal, killed and butchered for a fee. Bone, fat and trim come off in the cutting, so divide the total cost by the weight you take home before you compare. We do not collect butchers' bulk or homekill quotes. What we do have is the benchmark: today's supermarket price per kilo of the cuts a side of beef and a lamb are cut into.

A quick test at Auckland prices today: beef that works out below $16.99 a kg of meat you take home (beef corned silverside at Woolworths, the cheapest beef cut here) beats the supermarket on every beef cut in this table; above $44.99 (beef scotch fillet steak at New World) it is dearer on all of them. In between, it depends on how much of the quarter ends up as steak and how much as mince.

Is buying a whole lamb cheaper than the supermarket?
It can be, if the cost per kilo of meat you take home is below what the same cuts cost at the supermarket and you have the freezer space. A whole lamb comes as leg, chops, shoulder, shanks and mince in proportions you do not choose, so it only pays if you will eat all of it.
What is homekill, and is it cheaper?
Homekill is your own animal, killed on farm by a listed homekill provider and butchered for you. The meat is for your own household and cannot be sold. You pay a kill fee and a butchering fee rather than a price per kilo of meat, so whether it is cheaper depends on what the animal cost you to buy or raise.
